Avocado Chickpea Salad
Ingredients
1 can chickpeas
2-3 avocados based on size
1 bunch of cilantro
1 bunch of green onions
1 small block of feta
1-3 limes based on size
2 Tbs olive oil
Salt, pepper and garlic powder to taste
Directions
1) Chop cilantro and green onions finely
2) Cube avocados
3) Crumble Feta
4) Drain chickpeas
5) Cut limes in half
6) Add everything to a large mixing bowl. Squeeze limes over top. Mix and Enjoy!
*This usually only lasts about 4 days in the fridge, so don't over prep!
** If you leave out the feta, or use an alternative, the recipe will be vegan!
