Vegan Mound Balls (or Bars)
Ingredients
Dark chocolate bar x3
Shaved or ground plain coconut
Coconut oil melted
Coconut milk- full fat
Vanilla
Honey
Sea salt
Directions
1) Combine all ingredients, except for chocolate and sea salt, in a food processor.
2) Process and play with the amount of ingredients, until you get a consistency you can form into a ball. I start with about a cup of coconut shavings, and a few tablespoons oils, milk and honey (each). About a teaspoon of vanilla is good
3) Form into balls or bars. If you live in a hot climate where you buy your coconut oil and it's already fully melted, you may want to put your mixture in the freezer for an hour before forming them.
4) After your form your balls or bars, freeze for 1-2 hours
5) Melt chocolate and sprinkle in some salt to taste
6) Coat balls/bars fully in chocolate. Move to a lined plate or sheet, and store in fridge
7) Enjoy! Better than actual mounds bars imo! <3
